I have been meaning to get this recipe written down for ages, its one of those I threw together since nothing on Pinterest really fit the bill of what I was looking for. So while it’s still chilly, make some soup to warm up.
Chicken Tortilla Soup
1-2 chicken breasts
3 cans reduced sodium chicken broth
3 cups water
1 can reduced sodium black beans
1 can corn
1 can chilies and diced tomatoes
2 diced garlic cloves
¼ cup diced onion
½ cup rice
¾ tbsp. chili powder*
½ tbsp. Montreal steak seasoning
1 tsp onion salt
1tsp dried cilantro
1tsp dried chives
Heat large pot on medium heat. Add chicken, 1 cup water, 1 can broth, ½ tbsp. chili powder, steak seasonings, salt, garlic cloves, and diced onions.
Once chicken is cooked, remove chicken from pot and shred. Add beans and corn (do not drain), add tomatoes and chilies (drain slightly if desired), add cilantro, and remaining chili powder, broth, and water. Add rice and chives. Simmer on medium-low heat approximately 20 minutes until rice is cooked.

*increase or decrease chili powder amount depending on your spice preferences.
